Food Fact #4: Carrot

Carrot is more nutritious when cooked, unlike many other vegetables. Cooking breaks open the plant cells so antioxidants and other plant chemicals can be absorbed much better. Antioxidants are effective in supporting the body's immune system.

Carrot do improve night vision. They are an exellent source of beta-carotene, which is converted in the body into vitamin A. Darker, older carrot contain more beta-carotene than baby, new carrot.
